Slimming Worlds Pepper Pot Stew
I’m going to say now, I am not on a diet but I know lots of people are. And diets are changing, they aren’t about eating like a rabbit and always feeling hungry anymore. Diets and diet foods are changing, and they taste amazing. As my father in law said to me “I didn’t realise I was eating diet food till my clothes became loose! Continue reading
Spaghetti Bolognese with a twist
Spaghetti Bolognese is a weekly staple in our house, so this week I thought I would try changing it up a bit, it worked really well and went down a treat. Continue reading
Not paella, paella!
While shopping the other day I picked up some paella rice and seasoning with the intention of making the Spanish dish, then I realised that paella is primarily a fish dish – and I dont eat fish! And so not paella, paella was born. Originally I was only going to add chicken and chorizo but I found some pancetta in the fridge and thought why not! Continue reading
Beef and broccoli stir fry
It’s another quick one this week. I love a stir fry, the colours, the flavours and the quick and easy nature of them. As with any of my recipes you can substitute any of ingredients (I made a vegetarian version for my daughter using quorn mince)
Quick and easy lemon chicken with chilli and basil
When the weather gets warmer the last thing I want to do is stand in my kitchen cooking for hours and this week was no different. I decided to see what I had that I could throw together and this is what I came up with.
Cuban roast pork with sautéed sweet potatoes and thyme
This week I was contacted by belling range cookers, and asked to share a recipe that I love as part of there #goodlookingcooking campaign. So I thought long and hard and decided to share my favourite Sunday roast, with a twist! I originally came across this recipe while raiding my MiL’s very ample recipe book collection, she has more recipe books than Waterstones it truly is an amazing sight! I found it in her copy of Levi Roots, food for friends book and it was an instant hit and has become a Sunday staple – Just don’t forget the Yorkshire puddings!
Try it Tuesday Chicken and chorizo jambalaya
I’m a sucker for a one pot recipe, I think it comes from years of doing the washing up before I got my beloved dish washer, anything that cut down on washing up always gets my vote! I also love rice dishes and chicken and chorizo is a winning combination in my opinion. So when I found this recipe on the BBC good food site I couldn’t wait to give it a go.
Try it Tuesday – Tortilla chicken
This week I was a bit stuck for idea’s, so I had a look in my fridge and had half a jar of salsa left over from the night before, and half a bag of tortilla chips and tortilla chicken was born!
Try it Tuesday – potato pot pie
A couple of weeks ago Katie (mummy in a tutu) shared a delicious looking veggie chicken and mushroom pie, and it got me thinking. Could I create a vegetarian pie that we can all enjoy.
Try it Tuesday – Tomato and butter bean risotto
