Try it Tuesday – Tortilla chicken

This week I was a bit stuck for idea’s, so I had a look in my fridge and had half a jar of salsa left over from the night before, and half a bag of tortilla chips and tortilla chicken was born!

I thought to myself how can I combine these ingredients and this is what I came up with

  1. Put your oven on to per heat - 180°c (fan assisted) Then cut a piece of tin foil big enough to wrap your chicken up in, turn you chicken breast over an cut down the centre, being careful not to cut all the way though but opening up the breast.
  2. Next spoon your salsa over the chicken, then crush tortillas over the top and top with cheese.
  3. Seal each chicken breast up in the tin foil place on a baking tray and cook for 20mins - ensuring the chicken is cooked all the way though before serving. And serve, I had rice and tortillas as an accompaniment to mine.
Recipe Notes

As a last minute thrown together meal, it turned out really well, the only thing I would do differently is I would put the cheese on at the end and pop the chicken back in the oven, unwrapped for a couple of minutes to let the cheese melt all over it.
