Quick and easy lemon chicken with chilli and basil
When the weather gets warmer the last thing I want to do is stand in my kitchen cooking for hours and this week was no different. I decided to see what I had that I could throw together and this is what I came up with.

Ingredients
- 3 Chicken breasts Diced
- 2 Tbsp's Lemon juice
- 1 Tbsp Frozen fresh chopped chilli
- 1 Tbsp Frozen fresh chopped basil
- Cooking oil I used coconut oil
- Rice or pasta to serve

Instructions
- I started by putting my pasta on (although this would work with rice if you prefer) I then started by heating the oil and frying the chicken
- Once the chicken is starting to brown throw in the chilli, basil and then the lemon juice, as soon at the chicken is cooked, it's ready to serve.
