Spaghetti Bolognese with a twist
Spaghetti Bolognese is a weekly staple in our house, so this week I thought I would try changing it up a bit, it worked really well and went down a treat.

Ingredients
- 500 grams 5% minced beef
- 120 grams Spicy chorizo
- 85 grams Smoked pancetta
- closed cup mushrooms Sliced
- 1 Red or white onion Diced
- 1 tbsp Balsamic vinegar
- 1 Vegetable stock cube
- 1 Beef stock cube
- 2 Tins Chopped tomatoes with herbs

Instructions
- I started by frying the onion, mushrooms, pancetta and chorizo, until the mushrooms started to brown and the onions start to go translucent. Next I added the mince and browned.
- Once the beef was browned I stirred in the stock cubes and the balsamic vinegar. At this point I added the 2 tins of tomatoes - I blended mine up using a hand blender because my kids (and OH) don't like chunks of tomato!
- And then I just left it on a low heat to simmer for around 20-30mins until the sauce had been reduced by about half. Taste, season if necessary and serve.
Recipe Notes
I found adding chorizo and pancetta to my regular spaghetti bolognase recipe really was a simple yet yummy change a family favourite. Just as a tip i normally cook this at lunch time and then cover and let stand till the pasta is cooked and then i just give it a quick warm though and serve.
