Not paella, paella!

While shopping the other day I picked up some paella rice and seasoning with the intention of making the Spanish dish, then I realised that paella is primarily a fish dish – and I dont eat fish! And so not paella, paella was born. Originally I was only going to add chicken and chorizo but I found some pancetta in the fridge and thought why not!

  1. I started by heating the oil in a deep pan and frying the onions and garlic just until the onions started to go translucent.
  2. Next I added the meats and paella seasoning, once the chicken starts to cook, add in the rice.
  3. Stir, I insured everything was covered in the seasoning and cooked for a couple of minutes. The I added the chicken stock, covered and simmered for around 20mins. Stirring occasionally to ensure it doesn't stick to the bottom of the pan.
  4. Once all the liquid had been absorbed and the rice cooked the not paella was ready to eat, I served with a simple side salad.
Recipe Notes

We really enjoyed this, it was a really quick, easy to throw together meal that pretty much cooks it's self, I also made a veggie version for my daughter using quorn chicken pieces, veggie chorizo (that I got from Holland & Barrett), diced red pepper and veg stock.
