Slimming Worlds Pepper Pot Stew
I’m going to say now, I am not on a diet but I know lots of people are. And diets are changing, they aren’t about eating like a rabbit and always feeling hungry anymore. Diets and diet foods are changing, and they taste amazing. As my father in law said to me “I didn’t realise I was eating diet food till my clothes became loose!
My father in law highly recommended this dish, He could happily eat it everyday – high praise indeed!

Ingredients
- Low cal cooking spray
- 400g stewing beef Diced
- 1 Small sweet potato Peeled and diced
- 200g Green beans Trimmed and halved
- 2 Red peppers Deseeded and cut into bite-sized piece
- 200ml Beef stock
- 200ml Passata with onions and garlic
- 2 Garlic cloves Finely chopped
- 2 tbsp Jerk seasoning
- 1 tbsp Red wine vinegar
- 2 tbsp Worcestershire sauce
- Salt and freshly ground black pepper

Instructions
- To start with i got my big casserole pan, heated it up and sprayed a couple of squirts of the low cal spray. I then added the beef, frying it for a a few minutes until browned all over.
- Next i added all the veg, along with the garlic, passata, Worcestershire sauce, jerk seasoning, stock and the wine vinegar. I gave it a stir, seasoned, covered and moved to the back of the hob on a low heat. Leaving it to simmer for around an hour and a half !
- I cooked the rice according to the packet instructions, served and very much enjoyed!
Recipe Notes
We really enjoyed this and although it said it fed 2 we got 2 more lunch sized portions which i stuck in the freezer, another winning dinner that I'm going to put on a regular rotation especially now the weather is on the turn.
