Beef and broccoli stir fry
It’s another quick one this week. I love a stir fry, the colours, the flavours and the quick and easy nature of them. As with any of my recipes you can substitute any of ingredients (I made a vegetarian version for my daughter using quorn mince)

Ingredients
- 400g Quick frying beef Cut into strips
- 75mil Soy sauce I used a low salt version
- A head of broccoli Chopped in to small trees
- A bag Kale
- A tray Baby sweetcorn Cut in half length ways
- 1 tsp Garlic purée You can use 2 cloves if you don't have purée
- 1 tsp Ginger purée
- 1 tbsp fresh frozen chopped chilli
- What ever oil you use for cooking

Instructions
- Start by heating your oil till it's smoking hot, throw in your beef and seer the outside. Add in the soy sauce, chilli, garlic, ginger and stir.
- Next add the broccoli, babycorn and then add in the kale a handful at a time wilt the kale down and serve.
Recipe Notes
I had planned on stirring threw some straight to wok noodles but I forgot to buy some so I served it with rice. It would work with either accompaniment in my opinion.
