Try it Tuesday – potato pot pie
A couple of weeks ago Katie (mummy in a tutu) shared a delicious looking veggie chicken and mushroom pie, and it got me thinking. Could I create a vegetarian pie that we can all enjoy.
I had a google and found a Phil Vickery recipe and I have used it as a guide.
I have absolutely no shame in admitting that in this recipe I used ready made puff pastry, life is to sort to be messing around and if it’s good enough for Mary, it’s good enough for me!

- 2/3 Potatoes Par boiled
- 1 Large Tomato Chopped
- 360 Grams Mushrooms Chopped
- 200 Grams Green beans Top and tailed
- A bag Kale
- 1 Large Red onion Finely chopped
- 400 Ml Coconut milk (1 can)
- 2 Cloves of garlic Peeled and crushed
- 2 TBSP Oil I used coconut
- 2 TBSP Fresh Ginger Finely chopped
- Pinch Chilli flakes
- 2 TBSP Curry powder
- 2 TBSP Water
- 1 TSP Turmeric
- 1 TSP Cumin
- A packet of ready rolled puff pastry

- Start by heating your oil in a large wok, fry off the onion and garlic, once browned, add in the dried herbs, and cook for 20-30seconds being careful not to burn, next add the par boiled potatoes and mushrooms, stir.
- Next add the tomato, green beans, coconut milk and kale. Bring the coconut milk to the boil and turn down to simmer while you let the kale sweat down. At this point if you feel your gravey is a little lacking a bit of water to the pan.
- Once your oven is up to heat and your kale has wilted down, transfer it all to an oven proof dish, cover with the puff, wash it over with either milk or egg and cut a cross to allow steam to escape. Cook for around 20mins (until your pastry I see golden brown) Cut and serve, we had it with a bit of brown rice.
This pie was da bomb! We all really enjoyed it, even Sparkly daddy enjoyed it and he's a full on carnivore! We didn't miss the meat one little bit and it was nice to only have to cook 1 meal rather than 2. Another recipe that's going to end up on regular rotation.

I suspect my children would like this, they are fussy beasts, but hubby would love it (as long as it was alongside a steak, sorry veges but he really isn’t lol)

I love potatoes in a pie! We used to have meat and potato pie a lot, I think I was actually shocked to learn that some pies didn’t have potato in them! I’d then also serve the potato pie, with some form of potatoes! Basically, love potato! #foodiefriday
