Try it Tuesday Chicken and chorizo jambalaya
I’m a sucker for a one pot recipe, I think it comes from years of doing the washing up before I got my beloved dish washer, anything that cut down on washing up always gets my vote! I also love rice dishes and chicken and chorizo is a winning combination in my opinion. So when I found this recipe on the BBC good food site I couldn’t wait to give it a go.

- 1 Tbsp olive oil
- 100 Grams Chorizo (I used half a chorizo spicy sausage)
- 2 Chicken breasts
- 1 Diced onion
- 1 Red pepper
- 250 Grams Long grain rice
- 350 ml Chicken stock
- 400 Gram Chopped tinned tomatoes
- 1 Tbsp Cajun seasoning
- 2 Cloves of garlic

- I started by prepping everything, I chopped the chicken, chorizo, onion and the pepper. Once prepped, heat the oil in a large frying pan and cook the chicken for around 5mins.
- When the chicken is golden, remove and put to one side. Next add the onion and fry until soft then add the chorizo, garlic, pepper and the Cajun seasoning. Cook for a further 5mins
- Next add the cooked chicken, rice, tomatoes and stock, cover, bring to the boil then simmer for around 20mins (or until the rice is cooked) serve and enjoy!
I served the jambalaya with some tortilla chips to add a bit crunch! It went down really well and the Cajun seasoning and the chorizo added a nice bit of heat that complemented the other flavours perfectly, another I will definitely be doing again!
