Try it Tuesday – Mac, cheese ‘n’ veg
One of my daughters decided to become a vegetarian just after Christmas. Ever since I’ve been searching for yummy meal ideas for her.
I found this recipe for mac’n’cheese on mumzilla’s blog. I thought I would give it a bit of a tweak, and have a go at make it for her.

- 2 TBSP Butter
- 2 TBSP Plain flour
- 30g Cheddar cheese Grated
- 200g Macaroni I used penne
- 300mls Milk The amount required will depend on the consistency you prefer
- 2/3 Florets Broccoli (frozen) You could use cauliflower or a mix of the 2

- You start by popping by a saucepan of lightly salted water on for the pasta. Once boiling add in the pasta and frozen broccoli, while the pasta is cooking you can make a start on the melting your butter in a saucepan. Once melted stir in the flour to create a smooth paste.
- Next, to your paste start adding in the milk. Add it in a little at a time stirring continuously to insure there are no lumps. Keeping the heat on low to insure it doesn't boil. It will thicken as it cooks.
- Once the pasta and the broccoli are cooked, drain and set to one side. If you are happy with the consistency of your white sauce stir though most of the grated cheese, keeping some back. Mix until it's completely melted into the sauce.
- Add the pasta and broccoli to the cheese sauce and m. Ensure that the pasta and veg are completely covered. Then you can either put it in to an oven proof dish and pop it under the grill with the bit of cheese you saved. If you go with this, grill it for around 3mins until golden.
- Or you can serve it as it is with the cheese on top.
I have never successfully made a white sauce until I tried this, it really is a foolproof recipe. I got 2 serving from this so I froze the other portion for my daughter to have another night. It's a great basic recipe that can be tweaked to make lots of different meals. Best of all it tastes amazing. It's definitely been a winner for us.
