Try it Tuesday – Beef kofta curry
So this week it’s another Jamie’s recipe, this time it’s one of his 15 minute meals. I’m going to be honest I didn’t do it in 15 – I’m just not that organised, but it was still a quick tasty dinner.
For this recipe you will need
400g minced beef
Puy lentils – 250g pack of ready to eat
3 ripe tomatoes
2 spring onions
1 thumb sized piece of ginger – peeled
1 heaped tsp of garam masala
1 tsp of turmeric
2 heaped tsp pataks rogan josh curry paste
1 fresh red chilli
A bunch of fresh coriander
200ml coconut milk
1 tsp runny honey
salt and pepper
a lemon
and for the rice
200g green beans (cut in half)
200g frozen peas
300g basmati rice (a mug)
5 cardamom pods
Ok so let’s get started, I put the meat, lentils, garam masala, salt and pepper into a bowl and mixed together and then formed into 12 thick fingers I then placed them into a hot pan with a little oil, and cooked until they were a golden on one side and then turned them. For the rice, add the rice, 2 mugs of boiling water, the 5 cardamom pods and the beans to a saucepans, cover with the lid. Place the 3 tomatoes the ginger, half the chilli, turmeric, honey, coriander stalks, curry paste, coconut milk and spring onions into a food processor/liquidiser and give it a good blitz and pour in to the pan with the koftas to simmer. Remove the lid from the rice add the peas and give it a stir and leave to stand. Chop the remaining chilli and coriander leaves and stir in to the koftas sauce, cut the lemon into wedges, dish up the rice and koftas with a wedge of lemon on the side.
Mine might not have looked as pretty as Jamie’s but it tasted delicious!

I love curries and this is a great option because you don’t find a lot of curries you can make with beef mince. #foodiefriday
I can never do Jamie’s 15 minute meals in 15 minutes! Sounds lovely though, I’d have to leave out the lentils but I guess the important flavours would still be there! #FoodieFriday x

This sounds lovely – I love food with coconut in. I think I have this cook book – think I’ll have to dust it off & give this and done of his other recipes a go!
