Try it Tuesday – Spiced sausage cassoulet
The weather we’ve been having this week has been so miserable – thanks Angus! – so it’s been all about comfort food in the sparkly household.
With this in mind I had another rumage though my recipe books and tucked in the front of one I found a page pulled out of The Sun (from August 2013!) it was an exclusive from Jamie Oliver new (at the time) book ‘Save with Jamie’ when I saw that it included pork belly and sausages, I was completely sold on it and couldn’t wait to give it a try.
So for this you will need.
Good quality sausages (min80% meat) Jamie used 4, I used 6 because that’s how many was in the pack I bought!
150g pork belly – diced (or lardons)
1tsp sweet smoked paprika
Olive oil
1 red onion
2 carrots
700ml jar of passata
400g cannellini beans
a sprig of fresh rosemary
Ok so I started by preheating my oven to 180c (350f/gas mark 4) if you bought a piece of pork belly slice it up, if you bought lardons you don’t need to worry. I got my oven proof pan and heated up a bit of oil, I chucked in the lardons and sausages and got them cooking, while they was doing their thing I sliced my onion in to wedges and peeled and chopped my carrots – I sliced at an angle.
Once the sausages had started to brown I carefully removed them and cut them into 3 again at an angle and then returned them to the pan. I then added the the onion, carrot and paprika and cooked for around 15 minutes, – keep it moving! Then I stirred in in the passata and half filled the jar with water put the lid on, gave it a quick shake and added the water to the pan along with the drained cannellini beans gave it another good stir then covered and popped in the oven for 20mins.
While that was in the oven, I removed the Rosemary leaves and roughly chopped them and mixed with a lug of olive oil. When the 20mins was up I removed the lid and sprinkled over the Rosemary and then returned to the oven for a further 30mins. I served with some half baked rolls that I popped in the oven just before the cooking time was up.
And when it was done it tasted amazing like a great big hug in a bowl, just as good comfort food should be, I can see this becoming a popular go to meal over the winter months.
