Try it Tuesday – slow cooker basil chicken
This week I dug out my slow cooker to give 12tomatoes slow cooker basil chicken a go.
For this I needed
1kg of boneless, skinless chicken thighs
2 400g cans of coconut milk
2 jalapeños – finely chopped
1 red onion – finely chopped
6-8 crushed garlic bulbs
2 tablespoons of dried basil
2 tablespoons of yellow curry powder
1 teaspoon of chilli powder
I teaspoon of fresh grated ginger
1 tablespoon of cornstarch
and rice
I started by pooring the coconut milk into my slow cooker, to the coconut milk I added the onion, chilli, chilli powder, garlic, dried basil, and curry powder and mixed it all together. I switched the slow cooker to low and then seared all the chicken thighs added them to the slow cooker popped the lid on and forgot about it – well I tried to but it smelt so good !!!
About 20mins or so before we wanted to have dinner I shredded the chicken, added the ginger, gave it a quick stir and popped the lid back on, I then put the rice on to cook, once the rice is ready, dish up and enjoy !!!
this recipe says it feeds 6-8 and there was more than enough for us. What we didn’t eat I have stuck in the freezer for another day.

This is interesting! Is it a bit Thai flavoured? It sounds like it might be with the ginger and coconut milk. Looks lovely and anything that you can throw in the slow cooker is a good idea, mine rarely sees the light of day because I need more ideas like this! #foodiefriday xx

I love my slow cooker too! It’s one of the easiest ways of making a really lovely dinner without any effort really. Also, it’s totally lush when you get in from work and the house is filled with the smell of dinner just waiting for you! This looks great. #foodiefriday

Love coconut milk but we don’t have a slow cooker. Could give it a whirl on the hob but I guess the longer cooking process really infuses the flavours! Looks yummy! #foodiefriday
