Try it Tuesday – Pumpkin Soup

In honour of Halloween, this week I’ve decided to make pumpkin soup.

for this you will need

1 eating (not carving) pumpkin

an onion

a large potato ( I used a baking potato)

a couple of carrots

small amout of butter for frying

3 vegetable stock cubes

1 litre of water

salt and pepper – to taste

The best way I have found to prepare a pumpkin is to first peel it, this makes it a lot easier to cut. Once peeled, remove the seeds and the fibrous stuff and cut the flesh into chunks. Also peel and cut your carrots and potato. Finely dice the onion and fry in a small amount of butter in the saucepan your going to use, once the onions have softened and gone a golden colour add in the rest of your veg, give it a bit of a stir. Crumble in your stock cubes and add your water, bring to the boil then reduce the heat and leave to simmer till the veg is tender –  30 mins to an hour depending on how chunky your veg is. Once the veg is cooked liquidise it, (I used one of those wand hand blender things) season to taste and then your soup is good to go !!! Enjoy with a nice crusty roll.

(Dont forget you can freeze what you can’t eat)
