Try it Tuesday – Bombay potatoes

As regular readers will know, we love a curry in this house but I have a little confession I may make my curry but I normally buy – shock, horror! Ready made, ping bombay potatoes – oh the shame!

so this week I had a go at making my own, now I’m going to be honest it was a little bit more complicated than stabbing it with a fork and sticking it in the microwave, but it wasn’t as hard as I thought it would be either.

I used

4 large Maris piper potatoes, peeled and cut into bite sized bits

4 tbsp’s of tomato purée

A tin of tomatoes

4 tbsp’s of oil

1/4 tsp of chilli powder (you can add more or less depending on your own personal preference)

and 6 tbsp’s of easy curry powder – which I purchased from curryfrenzy.com (I find they are fab and buy all my spice mixes for my curries from them)

I started by mixing the curry, chilli powder and the oil together to make a paste. Next I fried the spices in the oil for around 2mins on a high heat, and then added the potatoes ensuring they were completely coated.

Next I added in the tinned tomatoes, tomato purée, gave them a good stir. Then topped up with water making sure everything was covered by it.

I bought it up to the boil and kept boiling them until it until the potatoes were nearly cooked and then reduced the heat and simmered until the sauce thickened stirring every couple of minutes. Once thickened your potatoes are ready to serve!

I don’t mind saying that you could taste the extra love, care and time in these, they tasted so much better than ping potatoes and I will never go back to them again that’s for sure, I have been converted!!!
