New series #TryItTuesday

Now I don’t know about you but as much as I try to be adventurous at meal times I always seem to go back to the old faithfuls and get stuck in a dinner rut, we always have pizza on a Friday, good old spaghetti bolognese and toad in the hole also get a weekly showing, so when I was told the other week that the average UK home has 15 cook books but only has 15 dinners that they cook regularly – I’m not how sure how true or accurate that is – but it got me thinking. So I have decided to start ‘try it Tuesday’, where I try a new recipe every week, I will be finding recipes on Pinterest, in my many cook books, online and this is where I want you to get involved too, I’d like you to send me your recipes, also I’d love for you to share you trying new things or recipes I’ve featured! Anyway enough with the idea and on with the cooking !

So last night I made a dish that I’m calling coconut chicken

for this dish I used

2 chicken breasts – diced

a packet of sugars snaps *

a bag of kale *

a tree of broccoli – chopped into little trees *

a tray of baby corn *

a couple of carrots – chopped *

a tin of coconut milk

squeezy lemongrass, ginger and garlic

a chicken stock pot

and lazy chilli – optional

* but you could use any veg you like/have in your fridge. I have chosen 5 different finds so in this 1 meal we get our 5-a-day !

I started by first heating coconut oil in my pan and then added The diced chicken once the chicken was browning I added a squeeze of the garlic, ginger and lemongrass – sorry I don’t measure but I would say at least a teaspoon of each, but this will be down to personal preference, I also add a teaspoon of the chilli but again adjust the amount to suit your tastes, the carrot and broccoli give it all a good stir and pour in the coconut milk and pop in the stock pot, when the coconut milk starts to bubble turn the heat down and chuck in your baby corn, sugar snaps and kale (I found with the kale I needed to add a handful at a time and let it wilt down)

Once the veggies are tender serve with rice or noodles and enjoy !

Everything for this mewas purchased in Aldi with the exception of the lemongrass, ginger, garlic and chilli which I got from Sainsburys.

  • Love this idea. I hate getting stuck in a rut with my cooking and I too have loads of cookbooks but feel as though very few of the recipes in them get much of an airing. I think for me it’s mainly to do with availability of ingredients. If I can’t get them in my local Tesco it’s much less likely that I’ll try them. This looks fab. As a veggie I wouldn’t include chicken but I think you could quite easily leave it out or use quorn instead so I might try this. #foodiefriday
