  1. Pre-heat your oven to around 160c, place the loaf end (a couple of days old works best), salt and pepper into a food processor and blitz into a fine crumb, spread out on abating tray and place in the oven for around 10mins or until its a golden brown colour.
  2. While the bread crumbs are in the oven, heat the oil in a large sauce pan and cook the chicken for around 5mins, then stir in the tinned tomatoes, butter beans, a pinch of pepper, the sugar and about half of the chopped parsley, turn the heat down to simmer, for around 10 mins (or until the chicken is cooked though) add the remaining parsley to the bread crumbs, top and serve.

This was just what we needed to warm us up after a trip to the park in the rain – got to love the typical school holiday weather we are having at the mo,  and it really did take no time at all. This recipe was from Sainsbury’s, ‘What’s for dinner?’ Recipe book, which has no less than 80 delicious recipes in it, for the bargain price of just £4, watch this space I’m sure there will be many more dishes featured here!

Top sparkly mummy tip, if you prefer, and you have the time you could use thighs and drumsticks and cook it low and slow – mmmmmmmmmmmm yummy!
